Climacteric fruit: The climacteric is a stage of fruit ripening associated with ethylene production and cell respiration rise. Apples, bananas, melons, apricots, tomatoes (among others) are climacteric fruit. Citrus, grapes, strawberries are non-climacteric (they ripen without ethylene and respiration bursts).
